Drew Bledsoe threw a party to celebrate the opening of his new winery and man cave during my visit to Walla Walla at the end of June. Production is now up to 8,500 cases, almost entirely Cabernet Sauvignon and an Estate Reserve that Bledsoe introduced in 2015. (He also made a bit of Chardonnay in 2016 but none in 2017 due to mildew.) Winemaker Josh McDaniel told me that in 2015 the tannins never got fully ripe and as a result there is more astringency in the wines. “The tannins were denser in 2016,” he went on, “and it’s a softer vintage with less structure.”
