Let’s cut to the chase. Samuel Billaud is one of the most exciting winemakers in Chablis. He has the “touch” that elevates wines to another level, an uncommon sense of completeness and complexity. Would I put him in the same tier as Vincent Dauvissat and Raveneau? I would. “The 2022 growing season was easier than in 2021, with no problems of disease,” Billaud told me as we worked our way through a complete line-up of cuvées. “During the summer, there was just a little hydric stress, but only in the young vines. We started picking on August 25, cropped between 30hL/ha for the Grand Crus up to 55hL/ha for the Petit Chablis. There are no changes with the vinification.
