I have been visiting Domaine Michel Mallard in Ladoix for several seasons now, usually in the early evening after he has clocked off from his "day job" as head winemaker at Domaine d'Eugénie. "I started the harvest on 1 September," he told me as he poured the samples from wines that had been racked and taken from tank. "All the Village Crus are 40% whole cluster with SO2 just added after the malolactic and then there will be another just before bottling."
