Here is another producer that took a few attempts to see, but Sébastian Caillat’s wines are always worth waiting for as they are, quite simply, some of the finest wines from Chassagne-Montrachet that you will find. Consequently, the secondary market has sprung up as volumes are so pitifully low, and as those prices reach multiples of his ex-cellar tariff, that is something that sits awkwardly with this winemaker. He never set out to become a cult Burgundy winemaker. We tasted down in his bitterly-cold cellar (thankfully, I nipped back up to my car and donned my coat). “In 2020, I started the picking on 23 August. It was a difficult season because there was a lot of oïdium, and so you spray sulphur, but that can burn the bunches and leaves when it is 40°C. The sulphites are low at the moment. They will be bottled just before harvest.” Interestingly, Caillat is experimenting with using “Wine Globes” alongside his regular oak barrels, using it to partially mature his Chassagne Champs Gain.
