Following the '98 harvest, Jean-Marc Pillot tried to ferment his wines without adding yeasts, especially in the premier crus hardest hit by frost. He left the cave cold in order to extend the alcoholic fermentations, and the wines finished drier than those of the previous year. Pillot then did a long debourbage lasting at least 24 hours, leaving behind three liters of lees per barrel, and stirred the lees twice as frequently as he had in '97. The malolactic fermentations went well, so it was not necessary to use excessive sulfur. The '98s from Chassagne-Montrachet finished with lower pHs than the '97s-contributing to my impression that the later year frequently produced better balanced wines in this village than did '97.
