Richard Fontaine told me he "picked chardonnay for acidity" in 2007, beginning on September 1, and believes that grapes harvested later suffered from a drop in acid levels. Grape sugars were in the 11% to 12% range and all of his wines were chaptalized. Fontaine compared his 2006s to the 1992s in their very ripe apricotty character. "We had a real concentration of fruit and sugar in the ten days before the harvest," he explained, continuing, "It will be necessary to be vigilant with the 2006s in your cellar. Will they age quickly, like the '98s?"
