Laurent Pillot, who started making wine in 1988, built a new facility in 1994 as he needed more space after getting Pommard vineyards from his wife side of the family in '93. Pillot now has 14.5 hectares of vines planted; while his most important holdings are in Chassagne-Montrachet and Pommard, he owns smaller parcels in more than 20 appellations. Fully 60% of his production is in red wine. Pillot describes 2001 and 2000 as very similar white wine vintages in terms of grape sugars and pHs, although he called 2001 a bit riper. (I also found them potentially finer than the earlier crop of wines.) He typically stirs the lees until January and ages his premier crus in about 30% new oak.
