Véronique Drouhin drove up from Beaune to Chablis to meet me at the idyllic Domaine Drouhin-Vaudon. “In 2016 there was the frost, hail and the mildew. We can’t deny that the season was tricky. Then again you didn’t have heat spikes and rain when we needed it. In 2017 we thought we might have a drought situation, but we got rain at the right time. We managed to avoid the hail but we were hit by frost. There is a high level of acidity. It went all the way through malolactic with pH levels coming out between 3.10 and 3.20. Part of the reason is that there were no heat spikes to burn the acid. Alcohol levels are from 13.0° to 13.7°, whereas in 2016 the levels were a little higher.”
