Etienne de Montille told me that it was too early to attempt to describe the 2016s. “At first I thought the vintage had less volume and depth than 2015 but I never doubted its freshness or balance,” he explained. “But the ‘15s are actually far from the image we had at the beginning: the fining streamlined the ’15 whites and contributed tension, purity and freshness. And the more the ‘16s develop, the more they are closing the gap; I’m sure we’ll end up with something pretty.” De Montille added that he’s starting with more lees nowadays, “so we do less stirring.” But he also noted that he wasn’t confident enough about the ripeness of the Chardonnay skins in 2016 to do much batonnage. None of the 2016 Domaine de Montille wines were chaptalized, and they will not be bottled until next March.
