Guillaume Camus was on hand to guide me through his 2022s at the winery on the outskirts of Savigny-lès-Beaune. I noticed a lovely old car in the garage and learned later that he enjoys restoring them in his spare time. “There was a bit of hail in Chorey-les-Beaune around June 22 and 25 June in the north of the appellation,” Camus explains. “It was very dry from March with little rain. We picked from August 28 and finished around September 5. It was a good crop. The wines are rich, but they have freshness because the dryness put the brakes on the maturation, plus the nights were cool. I used 30% whole bunch across all cuvées with a slightly shorter cuvaison as the fermentations were a little faster. Also, I used around 30% new oak, a little higher after the shortage of crops in 2021. I chaptalized a little, less than half a degree. All the whites are in tank, and they will be bottled from January.”
