Bousot began harvesting on 23 August on 2021, exactly one month earlier than the following year, picking over five or six days. Since 2018, they have begun to use the same amount of whole bunch across their wines, 30% used in 2020, with the same percentage of new oak for the Premier Crus. There is potential here, but given that they possess some choice parcels of vine, I maintain that they could strive for even better wines.
