In his new vinification facility, Ambroise continues to do a somewhat gentler extraction than previously. He punched the cap down just once a day in 2000, as he had done in '99. The 2000s won't offer the same depth of flavor as the delicious '99s, but there was no shortage of potential alcohol in 2000: only the Nuits-Saint-Georges Rue de Chaux needed a bit of chaptalization. The '99s, a few of which appeared to be a bit roasted and porty when I tasted them from barrel last year, boast superb, sappy fruit. (Robert Kacher Selections, Washington, D.C.)
