If you had big crops in years like 2005, 2011 and 2012, it was impossible to ripen your fruit, noted Pascal Lachaux, adding that there was "no quantity" at his estate in any of the last three vintages.Lachaux began harvesting on September 3 and chaptalized his 2011s between a half and a full degree.The pHs are slightly higher than those of the 2010s, a crop of wines that Lachaux described as "more vivacious and more minerally."Some vineyards in 2011 had a percentage of rotten grapes and required careful selection, he told me."When I drove through some parcels, I could smell the pricked grapes, the acetic bacteria," said Lachaux.Still, he added, "2011 and 2010 are our two best vintages in the last 20 years." The malos were all finished by March; three wines had been racked in mid-November and the rest were scheduled for racking in mid-December.Lachaux especially likes his Nuits-Saint-George cuvees in 2011 and also believes that this vintage favored his Clos Vougeot, as the tannins are refined and the wine does not show the early austerity typical of this grand cru.
