Since Naoko Dalla Valle brought in consultants Tony Soter and Mia Klein, there have been numerous changes here-more in winemaking than grapegrowing. A new membrane press allows for gentler extraction. The percentage of new oak for the Maya bottling has been increased from 35% to 50%. The 1996s were blended earlier. And, today, when filtration is called for it is done with diatomaceous earth rather than pads. Dalla Valle is in the process of replanting a vineyard that was affected by oak root fungus, and faces the challenge of stronger-than-ever demand at a time when production is down: there will be just 3,700 cases of wine in '97, down from about 4,700 at the peak. The '95s will be released in the fall of '98.
