Winemaker Raymon McKee does as much wild yeast fermentation as possible for the red wines here. He told me that 2012 was Chateau Ste. Michelle's first year with an optical sorter, but noted that the fruit in this vintage was very clean, not to mention easy to extract. McKee, whose goal is to capture the distinctive character of the vineyards he works with, pointed out that with the optical sorter, "There's no background noise from the stems or leaves."
