The Aubry brothers make some of the most distinctive wines in Champagnes. Among the signatures of this small estate are the use of Champagne's forgotten grapes (something that has become quite trendy in recent years) and a set of wines under the Sablé series that are bottled with less sugar, and therefore lower pressure, than is the norm. Stylistically, the Aubry Champagnes tend towards the more delicate, understated end of the spectrum.

The Aubry brothers make some of the most unique, singular wines in Champagne. Understatement and delicacy come to mind when I drink these wines, which is as often as possible. Aubry is known for resuscitating Champagne's forgotten varieties. Petit Meslier, Arbanne, Fromenteau and Pinot Blanc are all frequently used in the blends here. The Sablé wines, which are bottled with less sugar and therefore less pressure than is the norm these days, stand out for their fine bubbles and totally sensual feel. In short, there is a lot to discover in the pedigreed, artisan Champagnes of Aubry.
