Established in 2001, Amavi is owned by the same group of investors as Pepper Bridge, with partner Jean-François Pellet in charge of winemaking at both properties. All of the wines under both labels are estate bottlings from the same elite Walla Walla vineyards: Les Collines, Pepper Bridge and Seven Hills. The difference between the two is that the ageworthy wines are made at Pepper Bridge, while the Amavi bottlings are intended for earlier drinking. Annual production at Amavi is about 12,000 cases, with the Cabernet Sauvignon accounting for more than 60% of the total. Pellet told me that he picks "as early as possible, but without pyrazines."
