If there is one producer that really looked the 2018 growing season straight in the eyes and transcended the hypothetical limitations that its warm summer imposed, then it is Samuel Billaud. Comparing Billaud’s wines side-by-side with other growers, time and time again reconfirmed that somehow, he managed to eke out the tension and mineralité associated with a cooler season. Certainly, since moving into his new winery in the heart of Chablis ville has led to greater consistency across his range.
