Saint-Pierre, one of the first properties in the Medoc to adopt the Entropie system to concentrate the must, recently purchased a larger machine capable of removing a portion of the water from 1,200 liters of fruit per hour, twice the capacity of their original device. "The important thing is that we must be able to follow the rhythm of the pickers," explained maitre de chai Jean-Marie Galey. Some of the 2000 lots needed little or no concentration, noted Galey, "but then we didn't generally begin with especially high sugar levels." Saint-Pierre then did a rather gentle extraction in 2000. Incidentally, the estate cabernet franc was not up to the quality of its cabernet sauvignon or merlot and was left out of the blend.

Saint-Pierre was one of the first chateaux in the Medoc to adopt the Entropie system (1991) and continues to use it extensively—though less in '99 due to the high natural sugars of the year. This is one St. Julien estate where I clearly preferred '99 to '98.
