This is a stunning set of wines from the Aubry brothers. Finesse and understatement are two of the signatures that run through these brilliant Champagnes. As always, a number of the wines incorporate some or all of Champagne's nearly forgotten heritage varities. Aubry's Sablé series wines are bottled with 4 atmospheres of pressure as opposed to the more typical 6, an approach that seems add further textural delicacy.
