Pichon Baron
Small grapes with a high skin-to-juice ratio produced the highest polyphenol levels since 1990 at Pichon-Baron, reported manager Jean-Rene Matignon. The yield in '98 was a reasonable 48 hectoliters per hectare, down from 55 the previous year. Following some concentration of the juice using vacuum evaporation, the extraction was slow and steady. Thirty percent of the malolactic fermentation-essentially all of the merlot-was done in barriques, the most yet at Pichon-Baron.
