"The fruit that was brought into the winery in 2007 was as perfect as I've ever seen," said winemaker Bob Cabral: "clean and incredibly fresh, with healthy skins and full maturity." Cabral touted the virtues of old vines at a time when there are more warm vintages than in the past. "Older vines can be picked at lower Brix levels, which translates to greater energy and brightness in the wines," he explained, adding that if things stay hot, those old vines will start commanding an even greater price premium. "I like to embrace vintage variation rather than trying to make the same wine every year," Cabral told me, "and one of the best parts of being able to work with so many vineyards from different areas is that it's impossible to get bored, and practically impossible to make standardized wine, which suits me just fine."
