Jean-Luc Thunevin recently purchased a parcel of 35-year-old vines planted on red clay and chalk soil in the commune of St. Etienne de Lisse, and for the first time his quintessential vin de garage was made from this new holding, called Bel-Air Ou�, in 2000. The fruit here was harvested quite late, all on October 7 and 8. Thunevin clearly regards this parcel as the best source of fruit he had to work with for Valandraud and described the young 2000 as "the first Valandraud vintage that will last 20 years." Thunevin carried out a week-long cold maceration for Valandraud and most of the other right-bank wines he vinifies, then did a longer, cooler, "calmer" fermentation with minimal pumping over and punching down of the must. He then tried to prolong the malolactic fermentations, which all took place in barriques The wines below labelled "L'Interdit" were forbidden the St. Emilion appellation and the right to show the vintage on the label because Thunevin used plastic wrap on sections of his vineyards to protect the fruit from rain, a technique that is not allowed in St. Emilion. These wines will simply be labeled Vin de Table.
