There have been numerous subtle changes here in recent years, according to winemaker Dan Baron. A new ranch in the Chalk Hill area is contributing fruit and complexity to the Alexander Valley bottling. The winery has experimented with different yeasts since the '97 vintage. And Silver Oak has introduced barrels from a few new coopers and adjusted the toastiness of their American oak barrels over recent vintages. The wood is air-dried for 24 months, and Silver Oak routinely steams the new barrels to eliminate some of the harsher tannins, notes Baron. Perhaps most important, Silver Oak has added bits of cabernet franc and petit verdot to its Napa cuvee with the objective of making a stronger stylistic differentiation between the Napa and Alexander Valley bottlings-as well as justifying the price difference between the two releases (the '94 Napa was priced at $65, compared to $50 for the Alexander Valley). While both of Silver Oak cabernets are blends of numerous parcels, they vary significantly in one important respect: the Alexander Valley bottling is 95% from vines owned by Silver Oak, while the winery depends upon purchased fruit for nearly 80% of the Napa bottling. "[Owner] Justin Meyer is a master blender," points out Baron. "In theory he'd like to make the same wine each year." Surely Silver Oak fans would have no complaint if all of the winery's releases were as strong as the current release, the 1994 Napa Valley cab.
