Pacalet considers 2009 to be a good vintage but not a great one because so many wines are marked by the warmth of the growing season. "I make wines of terroir, not wines of the vintage," he explained. He began harvesting on September 12 and did no chaptalization, as potential alcohols were mostly 12.8% to 13.4%, with the Charmes-Chambertin at 14%. "The challenge has been to keep the wines fresh," he told me, adding that he rotated the barrels twice instead of racking the wines. The malos were finished by last December, and Pacalet plans to bottle the wines early.
