The heat spells in late August and early September made the chardonnay harvest and subsequent vinification here a challenge, as grape sugars soared and acidity levels fell. Winemaker Marc Aubert describes '96 as having less depth of flavor than the previous two vintages for chardonnay; the wines, he says, are more tightly wound and less forgiving, in part because some acidification and, in a few instances, addition of SO2 at bottling were necessary in light of the conditions of the vintage. But the huge '96 cabernet promises to be the best yet from this elite producer.
