"Burgundy is my inspiration, of course, as for anybody, anywhere, who makes chardonnay and pinot, but I don't want to make fake Burgundy," Paul Lato told me in September."This isn't the same soil, climate, fruit . . . anything.But it's good to have an inspiration.I hope that my wines are as complex as great Burgundy but with their own style."Lato told me that he is backing off on the use of new oak in general because it hides too much."It's the oak that I want to hide, not the fruit."He has settled into a comfort zone of around 60% new oak for his pinots but wants always to be flexible, and that attitude also goes for the use of commercial or wild yeasts for fermentation."If the wild yeast is strong enough, I use it, but that's not always the case and I don't want to be handcuffed by a policy that isn't working."

Paul Lato's wines are imbued with passion and personality. This is another superb set of wines from one of California's hottest under-the-radar producers. This year, Lato has two new wines; a Chardonnay from Hilliard Bruce (for whom he also consults) and a Grenache from the Larner Vineyard in the Santa Ynez Valley. All of these wines are made in tiny amounts, but they are well worth the effort of searching out.
