The news in St. Emilion in early April was that Gerard Perse had recently completed the purchase of Pavie after having bought Pavie-Decesse last July. Many insiders rank Pavie with Ausone as the best terroir in the appellation, so lovers of St. Emilion should have another superb choice in years to come. Perse has immediately elevated Pavie-Decesse, in part by harvesting the cabernet franc very late, beginning on October 8. (The former owners of Pavie, in contrast, started picking cabernet franc on September 18, according to Perse, and the sample I tasted lacked texture and ripeness.) Perse rejects the received wisdom that cabernet franc and merlot must be racked every three months; his '97s had been on their lees since October, and the plan was to leave them there for 15 months, without batonnage, racking only three months prior to bottling. This is very much the modern face of Bordeaux.
