Estate manager Jean-Charles Cazes told me that the selection for the grand vin was 63%, but that the estate actually began with lower yields in 2007 than in 2006 (50 hectoliters per hectare, vs. 53). The acidity level in the young 2007 is a relatively high four grams per liter, which made me wonder if the fruit had been harvested too early. But Cazes noted that the merlot was not picked until September 27, and that the last cabernet came in on October 10.
