I made two visits to Le Pin, first with Diana Berrouet Garcia at the property and then a few days later with Jacques Thienpont at their maison just a minute’s walk away.

“Waiting for the ripeness meant we had to risk rot and sort rigourously,” Berrouet told me. “We waited for the last moment, and then we had to pick. At L’Hêtre [the Thienpont’s property in Côtes de Castillon], we left the fruit on the vine, but we had to lose three hectares. We conducted 15-20% saignée for L’If and chaptalized half a degree, undertaking a soft extraction. The success of the vintage comes from the dry conditions over six weeks in July and August. We did no chaptalisation for Le Pin, with a little saignée for the lowest part of the vineyard where the water tends to accumulate.”
