Heitz Cellar is yet another winery in the Lawrence family’s portfolio that has made huge improvements under the leadership of CEO Carlton McCoy. Director of Winemaking Brittany Sherwood showed a range of exceptional wines capped off by a series of brilliant 2021 Cabernets. Winemaking style for the top selections feels pretty unchanged. The Cabernets are fermented in wood uprights, typically with no malolactic fermentation (the 2020) is an exception, and then aged for 36 months or so in cask.
