CEO Nicolas Sinoquet and technical director Virginie Sallette met me at Gruaud Larose. “It was not an easy vintage because of the rain in winter,” Sallette told me. “There was difficulty during flowering so we had a lot of millerandage and coulure that reduced yield to 31 hl/ha, which is not so bad. Mildew did not lower the yield. We made 35 treatments during the season, as we are organic, and we managed to contain the pressure. During the summer there were good conditions to achieve ripeness without a lot of rain. We started the picking on September 27 with the first Merlot vines and we were not in a hurry. We just wanted the best maturity possible. We did not work the soil a lot and we did not have any bunches with botrytis. There was no need to rush. During vinification, it was possible to go far in terms of extraction because of the ripeness, so extraction took 10 to 12 days. We used the same percentage of new oak , 90%, as we had some structure and balance. The level of alcohol is 12.39%—we didn’t want a high level. We chaptalised on some tanks, but there is no saignée or reverse osmosis, just a bit more remontage.”
