Tasting in this tiny cellar is always one of the highlights of my trips to Champagne. Vincent Laval crafts transparent wines loaded with class and personality. Laval brings his fruit in around 11-11.5%, quite high by Champagne standards. At those levels, wines do not require chaptalization. All of the wines are aged in oak. In fact, tasting here, is not unlike being in Burgundy, especially when it comes to scale, which is minuscule. These transparent, crystalline Champagnes are well worth the effort to find. The non dosage style can be a bit of shock for readers who aren't quite prepared for bracing Champagnes built on energy and tension.
