Sylvie Esmonin harvested between October 5 and 9, explaining that she wasn't waiting for more sugar but rather wanted the acidity levels in the grapes to go down and was also waiting for the tannins to ripen. Virtually no triage was necessary at harvest-time, she told me. "The wines were very acid before the malolactic fermentations and they're very fresh now--and not at all meager," said Esmonin, adding that they had the thickness and density to support chaptalization of between 0.5% and 0.8%. Esmonin was not shy about vinifying her 2013s with whole clusters, although she cut the percentage somewhat for her Clos Saint-Jacques.
