Boillot was one of a few winemakers on the Cote de Beaune who expressed the opinion that 2005 is very good in white and great in red."Some of the 2005 whites are a bit low in acidity," he told me, "and in general we really need to have a bigger crop in order to have truly balanced wines.It's the opposite with pinot noir, which benefits from a low crop level."He went on:"The best chardonnays are a matter of balance, not sheer concentration, and the most successful wines are never from years with tiny crops."The malos were over here by January, and the wines were sulfited in February.But they were still tricky to taste, as the lees had been stirred a few days prior to my visit and the wines were hazy.
