According to Didier Picq, 2005 was not truly a classic vintage for Chablis but neither was it exotic like 2003. "It's certainly very good and very typical," he summarized. "The wines have all the elements, and are not out of balance." Grape sugars were in the high 12.5% to 13% range, and no chaptalization was needed. In comparison, he went on, the 2004s show powerful minerality but a lack of sun, and all but the Vieilles Vignes bottling were chaptalized about a half-degree. Of course, Picq pointed out, "other vintages like this-those that show dominant minerality early-have aged the best. The '93s are great now." Didier is largely responsible for the cellar of this 13-hectare domaine (he told me he began vinifying in 1981), while his brother Pascal does the vineyards.
