With his low crop levels and high percentage of old vines, Bernard Dugat began harvesting his Cote de Nuits parcels in 2007 on September 1 and was finished by September 9. Dugat admits picking for fresh acidity rather than waiting for extreme ripeness, noting that grape sugars in '07 were in the 12% to 12.4% range and that most of his wines were chaptalized about a half-degree. The malos did not finish until the summer, and the wines were racked in September.

Bernard Dugat has farmed organically since 2003 and finds that his vines are resisting maladies better. And, as he has no clones and no large berries, he has fewer problems with rot than most of his neighbors. In 2006, Dugat did a pass through the vines three weeks before the harvest to remove any rotten berries, and eventually brought in fruit with healthy sugar levels, chaptalizing only a bit for the basic cuv es. Crop levels were just 28 hectoliters per hectare on average. Dugat describes his young 2006s as rounder and more harmonious than his 2004s, which he feels have a slight green taste in comparison.
