Winemaker Paul Colantuoni, a Princeton graduate, took over winemaking duties at this spectacular estate at the top of Diamond Mountain in time to make the 2006 vintage. Colantuoni noted that the Constant wines are always concentrated (crop levels are typically between two and two and a half tons per acre) and have a rather masculine structure, so the objective is to get enough fruit and freshness to balance the tannins. Colantuoni, who described himself as "a late picker," carries out a pre-fermentation cold soak lasting up to a week, and then does very little post-fermentation maceration. He believes that the style of 2007 worked well for these wines. "The '07s are flattering and supple here," he told me, while the 2006s in general are "blockier." Colantuoni pointed out that at the altitude of this estate's Diamond Mountain Vineyard there was no day in 2007 on which the afternoon temperature exceeded 97 degrees, and of course the vines benefit from morning sunshine as they are located above the fog layer. Interestingly, although the typical property on the Napa Valley floor this far north probably harvested a good two weeks earlier in 2007 than in 2006, here both years were picked late, with much of the cabernet sauvignon coming in during the third week of October. Fred and Mary Constant have 40 acres of vines planted, 75% of which is cabernet sauvignon, and still sell off 60% of their fruit. A good many of these plantings go back to 1985, and the youngest vines were planted in 1997 and 2000. Also recommended: 2006 Cabernet Franc Diamond Mountain Vineyard (86).
