Mathieu Cuvelier has taken this Saint-Émilion estate to great heights in recent years, which I will examine in detail in a forthcoming standalone piece.
“It was a balancing act,” Cuvelier explained, flanked by Head Winemaker Emmanuel de Saint Salvy. “In the beginning, it was rainy, but summer was dry and quite sunny. We had 5 mm of rain in July and August. Before that, we had quite a big loss from flowering, especially for the Merlot, so we are around 30 hl/ha at Clos Fourtet. The key point in September was to be patient until the end of the month. We started picking on September 25, with the heart beginning on the last day of the month as we wanted full ripeness. We did a strict selection of berries: sorting in the vineyard and using different sorting tables, bain densimètrique and so on. The berries were not crushed, and we did a natural fermentation. We extracted smoothly and slowly through a manual pigeage with no cold maceration, as it would be a mistake to try to extract something you don’t have.”
