"What can I tell you that you haven't already heard?" was how technical director Philippe Blanc prefaced his remarks about the 2007 vintage. "Actually, from May 2 through August 25 we had below-average rainfall," he said. "The problem was that we had at least a bit of rain every two or three days through the season. We spent the most money ever in the vineyards, not just protecting against mildew but pulling leaves on both sides of the vines and carrying out a green harvest." Blanc told me that the malolactic fermentation here takes place in about 300 of the 1,000 barrels of the grand vin, but he believes that this offers no advantages "past the en primeur tastings" in the spring.

Following a green harvest through half of their acreage, Beychevelle produced 48 hectoliters per hectare in 2006, said technical director Philippe Blanc. The ripeness, he said, was good. "On September 10, we had some merlots at 14% but then it started to rain. Ultimately, the merlots were not very attractive." Still, this chateau has replanted some cabernet sauvignon over to merlot in recent years, in some instances using grafting to save time, as the team believes that certain soils on the property are better suited to merlot than to cabernet. In the past few years, Blanc has narrowed down the selection of barrels from 12 coopers to just 6 or 7, and has ordered all his barriques with medium toast.
