Cécile Tremblay has moved into a new cellar in Morey, but her approach remains the same, which means stripped down to the bare essentials. Tremblay's wines are often slow to reveal themselves, a combination of minimal (if any) rackings and a generally hands-off approach to the wines that also includes a little more time in barrel than is now common, with only moderate levels of new oak. The 2011s are gorgeous across the board. Harvest started on September 1. Tremblay opted to ferment with 50-70% whole clusters, a bit high within the context of the vintage.
