Winemaker Bryan Kvamme reiterated his belief that "the fruit tells you when its ripe. It's a mistake to approach the vines with a recipe that says what some preferred set of numbers means when the fruit is correct. It varies from site to site and variety to variety, and of course there's the vintage factor." He said that "overripeness is no good, obviously, but harvesting if there's greeness left in the fruit mans that you're going to have to do things in the winery to overcome it."
