"The 2007 vintage is about fruit more than volume," said winemaker Philippe Brun, who did a soft extraction. "Still, the wines are a bit more sturdy than we thought at the beginning, and they didn't lose color during the racking, which is a good sign." Acidity levels were sound, and pHs were "not very high for here," he went on. He summed up: "The '07s are more pinot, but we find more personality and terroir in the '06s.
