Jean-Marc Boillot described his 2017 white wines as “taut like the 2016s, but with larger quantities, except in the premier crus,” where he produced only around 40 hectoliters per hectare due to hot weather during the flowering. He added that pHs are similar in the two vintages, at around 3.3. Boillot has long been obsessed with making focused, clean wines. He works with the same three cultured yeasts, which enable him to have problem-free fermentations. “Wild yeasts risk aromatic deviation and lack of precision,” he explained.
And yet he’s not a particularly early harvester. He waited until September 6 to begin picking his premier cru Chardonnay vineyards in ‘17, bringing in fruit with potential alcohol between 13% and 13.3%. He planned to rack his ‘17s in mid-June and bottle them in August. Incidentally, Boillot told me that he and his family are enjoying their 2011 reds and whites now.
