Colin described the 2017 vintage as “a dream: everything was ripe and balanced and it was the same for the Pinot Noir.” The vineyards needed water at the end of August and they were then nourished by rain. “But there wasn’t much dilution,” Colin insisted, and grape sugars ranged from 13% to 13.7% for the Chardonnays.
Colin told me that he’s been doing less and less stirring of the lees in recent years, especially when the sugar fermentations finish quickly, as they did in 2017. He stops stirring the lees when the malolactic fermentations start, as he doesn’t want to lose the freshening effect of the gas. The 2017 malos were finished by the end of January and Colin was planning to rack his wines into tanks in July and bottle them next January.
