Dan Kosta and Michael Browne told me that their pH sweet spot for pinot noir is 3.65 and that they got that pretty much across the board with their set of 2007s. "We want freshness, but our house style is also one of accessibility and a degree of opulence," Browne explained, adding that "2007 is a vintage that's got great perfume and freshness; the wines are as balanced and pure as anything we've ever seen." But while Browne and Dan Kosta make wines "that drink well straight out of the chute," they also believe that the 2007s are better equipped for the cellar than any other wines they've made.
