Third time lucky. I took three attempts to see Paul Zanetti, winemaker at Domaine Comte Armand, but the tastings would not have been complete without these wines. “We started picking on August 29 with the whites, only picking in the morning. It was a long picking over two and a half weeks. We needed six days to pick the Clos des Epeneaux instead of the usual couple of days. I tried to push the cuvaison longer in order to obtain the tannic structure with a one-week cold maceration, some days with one or no punch-down. In 2023, 30% is matured in concrete Clayver (eggs) that have less porosity compared to clay amphora and 70% in oak demi-muids for the Aligoté. We did not use any stems.”
