Fabien Cazé crafts Champagnes of notable character from holdings that measure under three acres of vineyards in the villages of Châtillon-sur-Marne and Vandières. Farming is certified organic. The wines are fermented and raised in barrel, with full malolactic fermentation, then finished with low or no dosage. This year, I especially liked the NV Brut Nature Crayère. It shows off Cazé’s style beautifully and is also a fine relative value in the world of high-end grower Champagne.
