Jérôme Fornerot told me that he undertook some green harvesting for the reds in 2023 and began to pick September 5 or 6, finding the fruit rich in sugar but without the concentration of 2022. “You had to be vigilant during the fermentation in terms of the temperature, which was slightly earlier,” he told me at his winery in Saint-Aubin. “The malo started very early. The whites are matured in 20% to 25% new oak and undergo a lenticular filtration before bottling.”
