This is a gorgeous set of new releases from Vilmart and proprietor Laurent Champs. The Vilmart Champagnes stand out for their total finesse and elegance, qualities that run through the entire range. All of the Vilmart Champagnes spend ten months in cask and do not undergo malolactic fermentation. Although hard to find, the late-release magnums are always special and a real treat to taste. Readers will also want to make a note to check out the 2009 Brut Premier Cru Grand Cellier Rubis, which is stunning in this vintage, not to mention one of the most distinctive and refined Rosés in Champagne.

The energy in the room was palpable and electric from the very start. I lead a few seminars each year, but this was different. I am not sure why. The wines were dazzling. Surely that had a lot to do with it. But the wines alone are never enough to sustain the energy in a room. There has to be something more. And that something is usually the audience. I can control which wines are served in a tasting, but not the participation of the attendees. This was one of those days where everything came together. I can say I had just as much fun tasting through these ten Champagnes as anyone in the audience. The setting was Pebble Beach Food and Wine. I was joined on the panel by Laura Maniec, MS, of Corkbuzz, Rajat Parr of Sandhi Wines and Sabato Sagaria, MS, Wine Director of The Little Nell. For the occasion I chose ten of my favorite grower Champagnes. Frankly, it was hard to narrow the choices to just ten, as there were many wines I would have loved to include.

It is a small miracle I managed to get to (and depart from!) my tasting with Laurent Champs at Vilmart a few weeks ago, as my visit coincided with a massive snowstorm. Once inside the winery though, it was business as usual. It tasted the 2012s from cask, plus a number of wines from bottle. As always, I was struck by the sheer purity and elegance of these Champagnes.

Laurent Champs crafts impeccable, elegant Champagnes of the highest level. The Vilmart Champagnes are so delicious when they are released I doubt too many are purchased for cellaring, but the reality is that the wines also age exceptionally well.
